Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan with a bit of oil or cooking spray.
- In a large mixing bowl, combine the mashed cantaloupe, granulated sugar, brown sugar, oil, eggs, and vanilla extract. Whisk until everything is well blended and smooth.
- In another bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt until evenly mixed.
- Gradually add the dry mixture to the wet ingredients. Stir gently until just combined, being careful not to overmix. If you’re using nuts, fold them in gently at this stage.
- Pour your batter into the prepared loaf pan, smoothing the top with a spatula.
Baking
- Place the pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Once baked, remove from the oven and allow the bread to cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.
Notes
To keep your Spiced Cantaloupe Bread fresh, store it in an airtight container at room temperature for up to 3 days. If you'd like to keep it longer, you can freeze it for up to 3 months. Just slice it beforehand for easy access! When you're ready to enjoy it, simply pop a slice in the microwave for about 15 seconds.
