Preparation
- In a large mixing bowl, combine ground beef, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, cayenne pepper, and a pinch of salt and black pepper. Mix until well combined.
- Take a handful of the mixture and form it around a wooden skewer, flattening it slightly for even cooking. Repeat the process for the rest of the mixture.
Cooking
- Preheat the grill to medium-high heat, or heat a skillet with a bit of oil over medium heat.
- Place the skewers on the grill or skillet. Cook for 5-7 minutes on each side until they are nicely browned and fully cooked through.
Tahini Sauce
- In a small bowl, whisk together tahini, lemon juice, and enough water to reach your desired consistency. Season with salt to taste.
Serving
- Remove kofta from skewers and serve with tahini sauce drizzled on top. Pair with rice or fresh vegetables for a complete meal.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze uncooked mixtures tightly wrapped in plastic wrap. When ready, thaw and cook as directed.
