Ingredients
  

Kofta Ingredients
  • 1 lb ground beef Ensure it's Halal-friendly.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper
  • to taste salt and black pepper
  • Wooden skewers (if grilling)
Tahini Sauce Ingredients
  • 1/2 cup tahini
  • 2 tablespoons lemon juice
  • to thin sauce as needed water

Method
 

Preparation
  1. In a large mixing bowl, combine ground beef, finely chopped onion, minced garlic, chopped parsley, ground cumin, ground coriander, cayenne pepper, and a pinch of salt and black pepper. Mix until well combined.
  2. Take a handful of the mixture and form it around a wooden skewer, flattening it slightly for even cooking. Repeat the process for the rest of the mixture.
Cooking
  1. Preheat the grill to medium-high heat, or heat a skillet with a bit of oil over medium heat.
  2. Place the skewers on the grill or skillet. Cook for 5-7 minutes on each side until they are nicely browned and fully cooked through.
Tahini Sauce
  1. In a small bowl, whisk together tahini, lemon juice, and enough water to reach your desired consistency. Season with salt to taste.
Serving
  1. Remove kofta from skewers and serve with tahini sauce drizzled on top. Pair with rice or fresh vegetables for a complete meal.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze uncooked mixtures tightly wrapped in plastic wrap. When ready, thaw and cook as directed.
