Ingredients

Main Ingredients
  • 1 can corn, drained
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped green onions
  • 1 packet taco seasoning
  • to taste Salt and pepper

Method

Preparation
  1. Begin by draining the corn and dicing the tomatoes and green onions if you haven’t already.
  2. In a large bowl, combine the sour cream and mayonnaise. Stir until they are well blended and creamy.
  3. Fold in the drained corn carefully so that it doesn't break up too much.
  4. Sprinkle in the taco seasoning and mix gently.
  5. Add the shredded cheese, diced tomatoes, and chopped green onions to the bowl. Fold everything together until well combined.
  6. Taste your dip, and then season with salt and pepper as needed.
  7. For the best flavor, let your dip chill in the refrigerator for at least an hour before serving.

Notes

For a lower-calorie version, use low-fat sour cream and mayonnaise. For a vegan option, swap these with plant-based alternatives. Avoid overmixing to maintain texture.
