Ingredients

Main Ingredients
  • 6 to 8 pieces ripe tomatoes, sliced Choose fresh, heirloom varieties for best flavor.
  • 1 pie crust pie crust (store-bought or homemade) Use a 9-inch pie dish.
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese Other cheeses like mozzarella or feta can be used.
  • 1/4 cup chopped fresh basil
  • Salt and pepper to taste
  • Fresh thyme (optional)

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using a store-bought pie crust, place it in a 9-inch pie dish. If making homemade, prepare your favorite crust.
  3. Arrange the sliced tomatoes in the pie crust, sprinkling them with salt and pepper.
  4. In a mixing bowl, combine mayonnaise, cheddar cheese, and chopped basil. Stir until blended.
  5. Pour the creamy mixture over the tomatoes, smoothing it out to cover completely.
Baking
  1. Place your pie in the preheated oven and bake for 30-40 minutes, or until the top is golden brown and bubbly.
  2. Allow the pie to cool for a few minutes before slicing.

Notes

For best flavor, use ripe tomatoes and consider adding more herbs like oregano or garlic powder for extra taste. Store leftovers in the refrigerator for up to 3 days, reheating in the oven.
