- Preheat your oven to 400°F (200°C) and prepare a muffin tin by greasing it with cooking spray or lining it with muffin liners.
- In a large mixing bowl, whisk together cornmeal, flour, baking powder, salt, and sugar until fully combined.
- In another bowl, whisk together milk, eggs, and melted butter until thoroughly blended.
- Pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix.
- Using a scoop, fill each muffin cup about two-thirds full with the cornbread batter.
- Place in the preheated oven and bake for 15-18 minutes, or until golden brown. Test with a toothpick—if it comes out clean, they’re ready!
- While they bake, mix together softened butter, honey, and a pinch of salt in a small bowl until well combined.
- Once the poppers have cooled slightly, drizzle the honey butter over them and serve warm. Enjoy!
