  • 2 tablespoons granulated sugar
  • 1 cup milk
  • 2 large eggs
  • ¼ cup melted butter
For the Honey Butter
  • ½ cup unsalted butter, softened
  • ¼ cup honey
  • A pinch salt

Preparation
  1. Preheat your oven to 400°F (200°C) and prepare a muffin tin by greasing it with cooking spray or lining it with muffin liners.
  2. In a large mixing bowl, whisk together cornmeal, flour, baking powder, salt, and sugar until fully combined.
  3. In another bowl, whisk together milk, eggs, and melted butter until thoroughly blended.
  4. Pour the wet mixture into the dry ingredients. Stir gently until just combined, being careful not to overmix.
  5. Using a scoop, fill each muffin cup about two-thirds full with the cornbread batter.
  6. Place in the preheated oven and bake for 15-18 minutes, or until golden brown. Test with a toothpick—if it comes out clean, they’re ready!
  7. While they bake, mix together softened butter, honey, and a pinch of salt in a small bowl until well combined.
  8. Once the poppers have cooled slightly, drizzle the honey butter over them and serve warm. Enjoy!

To ensure perfect poppers, avoid overmixing the batter and keep an eye on the baking time. You can also experiment with flavors by adding cheddar cheese, jalapeños, or herbs.
