Method
Preparation of Cake Layers
- Preheat your oven as directed on the cake mix box. Prepare two round cake pans by greasing them lightly.
- Follow the instructions on the cake mix box to mix the cake batter. Pour evenly into the prepared pans.
- Bake for the time indicated on the box or until a toothpick inserted into the center comes out clean. Let cool completely.
Prepare Strawberry Mixture
- While the cake cools, mix your sliced strawberries with granulated sugar in a bowl. Allow this to sit for at least 15-20 minutes until the strawberries release their juices.
Whip the Cream
- In a separate bowl, use an electric mixer to whip the heavy cream. Start at a low speed, gradually increasing, until soft peaks form.
- Add the powdered sugar and vanilla extract, continuing to whip until medium peaks form.
Assemble the Cake
- Once the cake layers are cool, cut each layer in half horizontally to create four layers.
- In a large bowl or punch bowl, start layering your cake: place the first layer down, followed by a layer of strawberries (with juices), then a layer of whipped cream.
- Repeat this process until all layers are used, finishing with whipped cream on top.
Garnish and Serve
- Decorate with any remaining strawberries on top for an elegant touch.
- Chill for at least an hour before serving to fully immerse the flavors.
Notes
For healthier alternatives, consider using a sugar-free cake mix or a lighter whipped topping. Fresh strawberries are key for the best flavor.
