Ingredients
  

Filling
  • 4 cups sliced fresh peaches Use ripe, fresh peaches for the best flavor.
  • 1 cup sugar Divided into 1/2 cup for filling and 1/2 cup for batter.
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice
Batter
  • 4 tbsp unsalted butter (melted)
  • 1 cup all-purpose flour
  • 1 cup milk Should be at room temperature.
  • 1 tbsp baking powder
  • 1/2 tsp salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the sliced peaches, 1/2 cup of sugar, ground cinnamon, vanilla extract, and lemon juice. Let this mixture sit for about 10 minutes.
  3. In a separate bowl, combine the remaining sugar, flour, baking powder, salt, and milk. Stir until smooth. Then mix in the melted butter.
Baking
  1. Pour the peach mixture evenly into a greased 9×13-inch baking dish.
  2. Spoon the batter over the peaches, spreading gently.
  3. Bake for 40-45 minutes until the top is golden brown and a toothpick inserted comes out clean.
  4. Allow to cool for 10-15 minutes before serving.

Notes

Serve warm, ideally with a scoop of vanilla ice cream or whipped cream. For optimal flavor, ensure peaches are ripe and avoid excess opening of the oven during baking.
