Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
Fruits
  • 1 1/2 cups fresh peaches, peeled and diced Canned peaches packed in juice can also be used.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even baking.
  2. In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Whisk until well combined.
  3. In another bowl, beat the eggs, then mix in the vegetable oil and vanilla extract until smooth.
  4. Pour the egg mixture into the dry ingredients and stir until just combined, being careful not to overmix.
  5. Gently fold in the diced peaches until they are evenly distributed.
  6. Grease a loaf pan and pour the batter into it, smoothing the top with a spatula.
Baking
  1. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  2. Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to three days. Bread can be frozen for up to three months.
