Preparation
- Preheat your oven to 350°F (175°C) to ensure even baking.
- In a large mixing bowl, combine the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt. Whisk until well combined.
- In another bowl, beat the eggs, then mix in the vegetable oil and vanilla extract until smooth.
- Pour the egg mixture into the dry ingredients and stir until just combined, being careful not to overmix.
- Gently fold in the diced peaches until they are evenly distributed.
- Grease a loaf pan and pour the batter into it, smoothing the top with a spatula.
Baking
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, let the bread cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to three days. Bread can be frozen for up to three months.
