Preparation
  1. In a large bowl, combine the cornmeal, baking powder, and salt. Whisk until well blended.
  2. Gradually stir in the water or milk until the mixture reaches a smooth, pourable consistency. Consider adding a tablespoon of cooking oil or melted butter for extra richness.
  3. Preheat a cast-iron skillet or non-stick pan over medium-high heat. Lightly grease the pan with oil or butter.
Cooking
  1. Pour about ¼ cup of the batter onto the hot pan for each hoecake. Cook for about 2-3 minutes until bubbles form on the surface and the edges start to look set.
  2. Carefully flip the hoecake using a spatula and cook for an additional 2-3 minutes until golden brown.
  3. Serve warm, topped with honey, butter, or your favorite savory accompaniment.
