  • 6 large large flour tortillas
  • 1 pound halal breakfast sausage
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large large eggs
  • 1 cup milk
  • 1 tablespoon hot sauce
  • Salt and pepper, to taste
  • 2 cups sausage gravy (homemade or store-bought)
  • Chopped green onions for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the halal breakfast sausage until browned and cooked through. Use a spatula to break it into small pieces. Once done, set aside.
  3. In a bowl, whisk together the eggs, milk, hot sauce, salt, and pepper. Pour the mixture into the same skillet and scramble until fluffy and just set. Remove from heat and let cool slightly.
  4. In each tortilla, add a generous scoop of scrambled eggs and cooked sausage, top with a sprinkle of shredded cheese. Roll up each tortilla tightly and place seam-side down in a greased baking dish.
  5. Pour the sausage gravy over the rolled tortillas, ensuring they are fully covered. Sprinkle more cheese on top if desired.
  6. Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and the gravy is bubbly.
