Preparation
- Preheat your oven to 350°F (175°C) to ensure even cooking.
- Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
- In a mixing bowl, combine the sliced bananas and half of the sugar (1/2 cup). Let them sit for a few minutes.
- In a separate bowl, whisk together the flour, baking powder, and salt until thoroughly mixed.
- In another bowl, mix the melted butter, milk, and vanilla extract. Blend this into the banana-sugar mix.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Pour the banana mixture into the prepared baking dish, spreading it evenly.
- Sprinkle the remaining 1/2 cup of sugar over the top of the batter.
- Bake for about 40 minutes, or until the cobbler is set and the top is golden brown.
- Let it cool for a few minutes before serving warm, ideally with a scoop of ice cream.
Notes
Check the cobbler around the 30-minute mark. If the top is browning too quickly, cover it with foil. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
