  • 4 pieces ripe bananas, sliced The riper the bananas, the sweeter your cobbler will be.
  • 1 cup sugar Divided into two portions.
  • 1/2 cup butter, melted Generously butter your baking dish to prevent sticking.
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) to ensure even cooking.
  2. Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  3. In a mixing bowl, combine the sliced bananas and half of the sugar (1/2 cup). Let them sit for a few minutes.
  4. In a separate bowl, whisk together the flour, baking powder, and salt until thoroughly mixed.
  5. In another bowl, mix the melted butter, milk, and vanilla extract. Blend this into the banana-sugar mix.
  6. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  7. Pour the banana mixture into the prepared baking dish, spreading it evenly.
  8. Sprinkle the remaining 1/2 cup of sugar over the top of the batter.
  9. Bake for about 40 minutes, or until the cobbler is set and the top is golden brown.
  10. Let it cool for a few minutes before serving warm, ideally with a scoop of ice cream.

Notes

Check the cobbler around the 30-minute mark. If the top is browning too quickly, cover it with foil. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
