Preparation
- In a bowl, combine the buttermilk, salt, and pepper, and let the chicken breasts soak for about 30 minutes.
- While the chicken is marinating, mix the flour, paprika, garlic powder, and onion powder in another bowl.
Cooking
- Remove the chicken from the buttermilk marinade, allowing the excess to drip off. Dredge each piece in the seasoned flour mixture until fully coated.
- Preheat your grill or grill pan over medium heat. Add a touch of oil to prevent sticking if necessary.
- Place the coated chicken breasts on the grill. Cook for about 6-8 minutes on each side until the chicken is cooked through and has beautiful grill marks.
Assembly and Serving
- Toast your sandwich buns lightly on the grill if desired.
- Place a grilled chicken breast on each bun, top with fresh lettuce, tomato slices, pickles, and drizzle with barbecue sauce.
- Serve these sandwiches warm with some extra sauce on the side.
Notes
Store leftovers in the refrigerator for up to 3 days. For the best quality, keep the grilled chicken and toppings separate until ready to eat. Can freeze marinated chicken or fully assembled sandwiches for up to a month.
