Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, whip the softened butter, granulated sugar, and brown sugar until creamy (about 2-3 minutes).
  4. Beat in the vanilla extract and egg until well combined.
  5. Add in the softened cream cheese and mix until smooth.
  6. Gradually mix in the dry ingredients until just combined.
  7. Gently fold in the chopped fresh strawberries.
  8. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet.
Baking
  1. Bake for 10-12 minutes, or until the edges are just golden.
  2. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  3. Garnish with additional strawberries if desired.

Use fresh strawberries for the best flavor, and consider chilling the dough for thicker cookies. Store in an airtight container at room temperature for up to three days.
