Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large mixing bowl, whip the softened butter, granulated sugar, and brown sugar until creamy (about 2-3 minutes).
- Beat in the vanilla extract and egg until well combined.
- Add in the softened cream cheese and mix until smooth.
- Gradually mix in the dry ingredients until just combined.
- Gently fold in the chopped fresh strawberries.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet.
Baking
- Bake for 10-12 minutes, or until the edges are just golden.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
- Garnish with additional strawberries if desired.
