Ingredients
  

For the cookies
  • 1 cup pumpkin puree Use fresh or canned, check for freshness.
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
For the frosting
  • 1 cup powdered sugar
  • 2 tablespoons milk Adjust consistency if needed.
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and sugar until fluffy and light.
  3. Add the pumpkin puree, egg, and vanilla extract. Mix until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until the dough forms. Do not overmix.
  6. Use a cookie scoop or tablespoon to portion out the dough onto a lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Place the baking sheet in the oven and bake for 10-12 minutes or until the edges are lightly golden.
  2. Allow cookies to cool on the tray for a few minutes before transferring them to a wire rack.
Frosting
  1. In a bowl, mix powdered sugar, milk, and cinnamon until smooth.
  2. Once cookies are cool, spread the cinnamon frosting over the cookies or dip the tops in the frosting.

Notes

Use fresh pumpkin puree for better flavor. Feel free to experiment with spices like ginger or allspice. To keep cookies soft, avoid overbaking.
