  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a separate mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Beat until smooth and fluffy.
  4. Mix in the egg and vanilla extract until fully integrated.
  5. Gradually add the dry ingredients and stir until just combined—do not overmix.
  6. Drop tablespoonfuls of the dough onto the prepared baking sheet, leaving space between each.
  7. Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Allow to cool for 5 minutes before transferring them to a wire rack.
