- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt until well combined.
- In a separate mixing bowl, combine the creamy peanut butter, granulated sugar, and brown sugar. Beat until smooth and fluffy.
- Mix in the egg and vanilla extract until fully integrated.
- Gradually add the dry ingredients and stir until just combined—do not overmix.
- Drop tablespoonfuls of the dough onto the prepared baking sheet, leaving space between each.
- Bake for 10-12 minutes, or until the edges are lightly golden.
- Allow to cool for 5 minutes before transferring them to a wire rack.
Notes
For crunchier cookies, consider adding nuts or chocolate chips. Store in an airtight container at room temperature for up to one week, or freeze for longer storage.
