Ingredients
  

Cookie Dough
  • 2 cups all-purpose flour Make sure it's leveled off.
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened Best to be at room temperature.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
Cinnamon Filling
  • 2 tablespoons ground cinnamon
  • 1/4 cup powdered sugar For icing.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until combined. Set aside.
  3. In a separate bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy for about 2-3 minutes.
  4. Beat in the egg and vanilla extract into the butter mixture until fully incorporated.
  5. Gradually blend the dry ingredients into the wet mixture, mixing until just combined.
  6. In a small bowl, combine the ground cinnamon and more brown sugar to create the cinnamon filling.
Baking
  1. Scoop about a tablespoon of dough, flatten it slightly in your palm, sprinkle a teaspoon of the cinnamon mixture onto the dough, fold it over, then roll it into a ball.
  2. Place rolled dough on a parchment-lined baking sheet.
  3. Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden.
  4. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
  5. Drizzle with powdered sugar icing as they cool.

Notes

Store cookies in an airtight container at room temperature for 3 to 5 days. Refrigerate for up to a week or freeze for up to 3 months.
