  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
Wet Ingredients
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract (alcohol-free)

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a medium-sized bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, beat the softened butter with both sugars until the mixture is light and fluffy.
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. Gradually stir in the dry ingredient mixture until combined. The dough should be soft and slightly sticky.
  6. Use a cookie scoop or a tablespoon to portion out the dough. Roll each piece into a ball and then roll in sugar until coated.
  7. Place the cookies on a prepared baking sheet, spaced about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set but the centers remain soft.
  9. Remove from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.

Notes

Allow cookies to cool completely before storing them in an airtight container. They will keep well at room temperature for about a week. For longer storage, freeze the cookies for up to three months. To enjoy later, thaw at room temperature or microwave for a few seconds.
