Preparation
- Preheat the oven to 350°F (175°C).
- In a medium-sized bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
- In a large bowl, beat the softened butter with both sugars until the mixture is light and fluffy.
- Mix in the egg and vanilla extract until fully incorporated.
- Gradually stir in the dry ingredient mixture until combined. The dough should be soft and slightly sticky.
- Use a cookie scoop or a tablespoon to portion out the dough. Roll each piece into a ball and then roll in sugar until coated.
- Place the cookies on a prepared baking sheet, spaced about 2 inches apart.
- Bake for 10-12 minutes or until the edges are set but the centers remain soft.
- Remove from the oven and let them cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
Notes
Allow cookies to cool completely before storing them in an airtight container. They will keep well at room temperature for about a week. For longer storage, freeze the cookies for up to three months. To enjoy later, thaw at room temperature or microwave for a few seconds.
