  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, whisk together the flour, ginger, cinnamon, nutmeg, baking soda, and salt. Set aside.
  2. In a separate bowl, using a hand mixer or stand mixer, cream together the softened butter and brown sugar until light and fluffy.
  3. Mix in the molasses, egg, and vanilla extract until fully combined.
  4. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Ensure no flour pockets remain.
  5. Cover the dough and refrigerate for at least 2 hours or overnight.
Baking
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Roll out the chilled dough on a floured surface to about 1/4 inch thick. Use cookie cutters to make gingerbread men shapes and place them on the baking sheets.
  3. Bake in the preheated oven for 8-10 minutes, until edges are set. The centers may look soft, but they’ll firm up once cooled.
  4. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks.
  5. Decorate with icing or sprinkles if desired.

Notes

Chill the dough for enhanced flavor and easier handling. Adjust spices to your preference. Cookies should be soft-center when removed from the oven.
