Preparation
- In a bowl, whisk together the flour, ginger, cinnamon, nutmeg, baking soda, and salt. Set aside.
- In a separate bowl, using a hand mixer or stand mixer, cream together the softened butter and brown sugar until light and fluffy.
- Mix in the molasses, egg, and vanilla extract until fully combined.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined. Ensure no flour pockets remain.
- Cover the dough and refrigerate for at least 2 hours or overnight.
Baking
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Roll out the chilled dough on a floured surface to about 1/4 inch thick. Use cookie cutters to make gingerbread men shapes and place them on the baking sheets.
- Bake in the preheated oven for 8-10 minutes, until edges are set. The centers may look soft, but they’ll firm up once cooled.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks.
- Decorate with icing or sprinkles if desired.
Notes
Chill the dough for enhanced flavor and easier handling. Adjust spices to your preference. Cookies should be soft-center when removed from the oven.
