Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and vanilla extract. Mix until well combined and a dough forms.
- In a separate small bowl, mix together the sugar and cinnamon for coating.
- Using a tablespoon, scoop out portions of dough and roll them into balls. Roll each ball in the cinnamon-sugar mixture until fully coated.
- Place the coated dough balls on the prepared baking sheet, leaving some space between each to allow for spreading.
Baking
- Bake in the preheated oven for 9-11 minutes or until the edges are lightly golden.
- Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to wire racks.
Notes
To keep cookies fresh, store in an airtight container at room temperature for 4-5 days. For added moisture, include a slice of bread. Can freeze for up to 3 months.
