Ingredients
  

For the cookie dough
  • 1 box yellow cake mix Use any brand you prefer
  • 2 large eggs For best results, use room temperature eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract Pure vanilla extract is recommended
For the cinnamon-sugar coating
  • 1 tablespoon cinnamon Adjust to taste
  • 1/4 cup granulated sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cake mix, eggs, vegetable oil, and vanilla extract. Mix until well combined and a dough forms.
  3. In a separate small bowl, mix together the sugar and cinnamon for coating.
  4. Using a tablespoon, scoop out portions of dough and roll them into balls. Roll each ball in the cinnamon-sugar mixture until fully coated.
  5. Place the coated dough balls on the prepared baking sheet, leaving some space between each to allow for spreading.
Baking
  1. Bake in the preheated oven for 9-11 minutes or until the edges are lightly golden.
  2. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to wire racks.

Notes

To keep cookies fresh, store in an airtight container at room temperature for 4-5 days. For added moisture, include a slice of bread. Can freeze for up to 3 months.
