  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

  • 1 cup brown sugar, packed
  • 1/2 cup maple syrup
  • 1/2 cup milk
  • 1/4 cup vegetable oil Or melted coconut oil for a Halal-friendly option.
  • 2 large eggs
  • 1 tablespoon vanilla extract

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan or line it with parchment paper.
  2. In a bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  3. In a separate large bowl, whisk together the brown sugar, maple syrup, milk, vegetable oil, eggs, and vanilla extract until fully combined.
  4. Slowly add the dry mixture into the wet mixture, gently folding until just combined. A few lumps are fine.
Baking
  1. Pour the batter into the prepared baking pan, spreading it evenly and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let them cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
  3. Once cooled, cut them into bars and serve with a drizzle of extra maple syrup or your favorite toppings!

Notes

Store in an airtight container at room temperature for 3-4 days. They can be refrigerated for a week or frozen for up to 2 months. Reheat in the microwave for 10-15 seconds or in the oven at 350°F for 5-7 minutes.
