- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the grated apple and walnuts (if using) until evenly distributed.
- Use a cookie scoop or tablespoon to drop dough onto a prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are slightly golden.
- Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to wire racks to cool completely.
Notes
For perfect cookies, try substituting half the flour with instant oats for added chewiness. Avoid overbaking, as cookies will continue to cook when removed from the oven. Ensure butter is softened for ease of mixing and grate apples for the best texture.
