  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder

Method

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, beat the softened unsalted butter, granulated sugar, and brown sugar together using a hand mixer or stand mixer until light and fluffy, about 3-4 minutes.
  3. Add the eggs one at a time, mixing in between each addition. Stir in the vanilla extract until well combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and baking powder until well blended.
  5. Gradually add the dry mixture to the wet mixture, stirring just until combined. Do not overmix.
  6. Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden but the center is still soft.
  8. Once out of the oven, let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, ensure butter is at room temperature. Chilling the dough for 30 minutes can enhance flavor and prevent spreading. Consider adding toppings like colored sprinkles or powdered sugar after baking. Store cookies in an airtight container for up to 1 week or freeze for up to 3 months.
