  • 4 cups mini marshmallows plus 1/4 cup for toppings
  • 3 tablespoons butter unsalted
  • 1 teaspoon vanilla extract

Preparation
  1. Begin by measuring out your Rice Krispies, mini marshmallows, and other ingredients to have everything ready for assembly.
  2. In a large saucepan, melt the butter over low heat. Once melted, add 4 cups of mini marshmallows, stirring constantly until they fully melt and form a gooey mixture. Remove from heat and add in the vanilla extract.
  3. Gently fold the Rice Krispies cereal into the melted marshmallow mixture until evenly coated.
  4. On a clean surface or parchment paper, spread the Rice Krispie mixture evenly into a rectangle about ½ inch thick.
  5. Sprinkle the crushed graham crackers and chocolate chips evenly over the Rice Krispie layer. Top with a handful of mini marshmallows for that extra s’mores flair!
  6. Carefully roll the mixture into a tight log, using the parchment paper to help you guide it. Seal the edges by pressing them gently.
  7. Wrap the rolled pinwheel in parchment paper and refrigerate for about 30 minutes to set. Once firm, slice it into equal pieces.
  8. Arrange the pinwheels on a serving plate, and watch as everyone goes for a bite!

Notes

For substitutions, consider using halal caramel bits instead of chocolate chips. To prevent the mixture from becoming too sticky, lightly butter your hands while shaping the pinwheels.
