Ingredients
  

For the kabobs
  • 1 pound smoked sausage, sliced into chunks
  • 2 large chicken breasts, cut into 1-inch pieces
  • 2 medium potatoes, peeled and cubed (about 2 cups)
  • 1 each bell pepper (any color), cut into chunks
  • 1 each onion, cut into wedges
For the marinade
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Method
 

Preparation
  1. Preheat your grill or a skillet over medium heat.
  2. In a large bowl, combine the olive oil, salt, black pepper, garlic powder, and paprika to create a marinade.
  3. Add the smoked sausage, chicken, potatoes, bell pepper, and onion to the bowl and toss until well coated.
  4. Thread the marinated ingredients onto skewers, leaving space between each piece.
Cooking
  1. Place the skewers on the preheated grill or skillet and grill for about 15 to 20 minutes, turning occasionally until the chicken is cooked through and the potatoes are tender.
  2. Ensure the chicken reaches an internal temperature of 165°F.
Serving
  1. Remove skewers from heat and let them rest for a few minutes before serving.
  2. Enjoy with your favorite sauces or sides!

Notes

Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to two months. Reheat in the oven at 350°F for 10-15 minutes.
