Ingredients

Dry Ingredients
  • 500 g all-purpose flour
  • 100 g sugar
  • 10 g baking powder
  • 1 pinch salt
Wet Ingredients
  • 200 g plain yogurt Ensure it is halal-certified
  • 2 large eggs
  • 100 g butter, melted
  • 1 teaspoon vanilla extract

Method

Preparation
  1. Preheat your oven to 180°C (350°F) to ensure it’s ready when your dough is prepared.
  2. In a large mixing bowl, combine the flour, baking powder, salt, and sugar. Stir to distribute the dry ingredients evenly.
  3. In another bowl, whisk together the yogurt, eggs, melted butter, and vanilla extract until smooth.
  4. Pour the wet mixture into the bowl of dry ingredients. Mix with a spatula or wooden spoon until just combined, taking care not to overwork the dough.
  5. Dust your work surface with a little flour and turn the dough out onto it. Knead for about 5 minutes, until it becomes smooth and elastic.
Baking
  1. Divide the dough into small balls (about the size of a golf ball) and place them on a baking tray lined with parchment paper. Leave some space between them, as they will rise.
  2. Place the tray in the preheated oven and bake for about 20-25 minutes, or until the tops are golden brown.
  3. Once baked, let the brioche breads cool slightly before serving.

Notes

For the perfect Small Yogurt Brioche Breads, consider substituting yogurt with Greek yogurt for a richer flavor. Timing matters; don't rush the kneading process as it helps develop gluten. Avoid overworking the dough to prevent dense breads. Store in an airtight container at room temperature for up to 3 days or freeze for up to a month. Reheat in the oven at 160°C (320°F) for 10-15 minutes to restore freshness.
