Ingredients

Main Ingredients
  • 2 cups Fresh figs, chopped Wash well and chop into bite-sized pieces.
  • 1 cup Sugar Standard granulated sugar.
  • 2 tablespoons Lemon juice Use freshly squeezed for best flavor.
  • 1/2 cup Water Regular tap water is fine.

Method

Preparation
  1. Begin by washing your fresh figs under cold water. Pat them dry, and remove the stems. Chop them into small pieces and set aside in a mixing bowl.
  2. In a large pot, combine the chopped figs, sugar, lemon juice, and water. Stir everything together until well-mixed.
Cooking
  1. Place the pot on medium heat. Bring the mixture to a gentle boil while continuously stirring to dissolve the sugar.
  2. Once boiling, reduce the heat to low and let it simmer for about 40-50 minutes, stirring occasionally. The mixture will thicken as it cooks.
  3. To test your preserve, place a spoonful on a chilled plate. Run your finger through it; if it holds its shape, it’s ready to jar. If not, simmer a bit longer.
Jarring and Storage
  1. Once the desired consistency is achieved, carefully ladle the hot preserve into clean, sterilized jars. Seal tightly while still warm.
  2. Allow the jars to cool down to room temperature, then store in the refrigerator for up to 2-3 weeks. For long-term storage, process them in a water bath.

Notes

For best results, use ripe figs. Sugar substitutes like agave or honey can be used but may alter texture. Ensure not to overcook to prevent burning.
