  • 4 cups chicken broth (homemade or store-bought)
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with juice)
  • 1 cup frozen peas
  • 2 teaspoons dried thyme
  • 1 teaspoon oregano

Preparation
  1. Start by collecting all your ingredients. This makes the process smoother and more enjoyable.
  2. In a skillet over medium heat, brown the ground turkey until it’s fully cooked. Drain any excess fat if needed.
  3. Transfer the cooked turkey to the slow cooker. Add the chicken broth, carrots, celery, onion, garlic, diced tomatoes, frozen peas, thyme, and oregano. Stir everything to combine.
  4. Season the soup with salt and pepper to taste.
  5. Cover the slow cooker and set it to low for 6-8 hours or high for 3-4 hours.
  6. When ready, taste the soup and adjust the seasoning if necessary. Ladle it into bowls, add a sprinkle of fresh parsley on top, and enjoy!

Notes

Feel free to swap in any of your favorite vegetables such as green beans, corn, or sweet potatoes. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to three months.
