Ingredients

  • 1 lb ground beef (or turkey) For a leaner option, substitute with chicken or halal ground meat.
  • 1 can black beans, drained
  • 1 can kidney beans, drained
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 packet taco seasoning
  • 1 cup water
  • to taste Salt and pepper
Optional Toppings
  • to taste shredded cheese Melted on top for added flavor.
  • to taste sour cream To add creaminess.
  • to taste green onions Chopped for freshness.

Method
 

Preparation
  1. In a skillet over medium heat, cook the ground beef (or turkey) until browned. Drain any excess grease.
  2. In your slow cooker, combine the browned meat with the black beans, kidney beans, corn, diced tomatoes, taco seasoning, water, and add salt and pepper to taste.
Cooking
  1. Set your slow cooker to low and allow the soup to cook for 6-8 hours. Alternatively, set it to high and cook for 3-4 hours if short on time.
Serving
  1. Once cooked, stir everything and taste to adjust seasoning if necessary. Serve hot with your desired toppings.

Notes

For a spicier variant, consider adding jalapeños. Avoid overcrowding the slow cooker; if you have a large quantity, it’s best to cook in batches. Serve with a variety of toppings to let everyone customize their bowl.
