Preparation
- Start by chopping and dicing your vegetables and beef. Having everything ready will make the cooking process smoother.
Cooking
- In a skillet, heat the olive oil over medium-high heat. Sear the beef stew meat for about 3-5 minutes until it’s browned on all sides. This step adds an extra depth of flavor.
- In the slow cooker, layer the diced potatoes, carrots, onions, and garlic.
- Place the seared beef over the vegetables.
- In a separate bowl, mix the beef broth, diced tomatoes, thyme, paprika, salt, and pepper. Pour this mixture over the meat and vegetables in the slow cooker.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. The longer cooking time will yield more tender meat and flavors melded together.
- Once it’s cooked, taste and adjust seasoning if needed. Serve hot, and enjoy every spoonful!
