  • 1 pound beef stew meat, cut into bite-sized pieces
  • 4 medium potatoes, diced
  • 3 large carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can diced tomatoes (14.5 ounces)
  • 2 teaspoons dried thyme
  • 2 teaspoons paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

  1. Start by chopping and dicing your vegetables and beef. Having everything ready will make the cooking process smoother.
Cooking
  1. In a skillet, heat the olive oil over medium-high heat. Sear the beef stew meat for about 3-5 minutes until it’s browned on all sides. This step adds an extra depth of flavor.
  2. In the slow cooker, layer the diced potatoes, carrots, onions, and garlic.
  3. Place the seared beef over the vegetables.
  4. In a separate bowl, mix the beef broth, diced tomatoes, thyme, paprika, salt, and pepper. Pour this mixture over the meat and vegetables in the slow cooker.
  5. Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. The longer cooking time will yield more tender meat and flavors melded together.
  6. Once it’s cooked, taste and adjust seasoning if needed. Serve hot, and enjoy every spoonful!
