Preparation
- Start by washing your plums thoroughly. Cut them in half, remove the pits, and chop them into smaller pieces. You can leave the skin on for added texture and nutrients.
- Add the chopped plums to your slow cooker. Then, sprinkle in the sugar, lemon juice, and ground cinnamon. Stir well to combine all the flavors.
Cooking
- Cover your slow cooker and set it on low for 6 to 8 hours.
- Once the cooking time is up, remove the lid and let it cool slightly. Use an immersion blender (or a standard blender in batches) to puree the mixture until smooth or leave it chunky if you prefer a more textured butter.
Storage
- After blending, allow the plum butter to cool completely. Transfer it into sterilized jars or airtight containers for storage.
Notes
You can swap the sugar for coconut sugar or a natural sweetener like maple syrup for a healthier twist. Keep an eye on the last hour of cooking to ensure it doesn’t over-thicken. If it does, you can add a splash of water. Refrigerate in an airtight container for up to two weeks or freeze for up to six months.
