  • 1 pound chicken breasts Boneless, skinless
  • 4 cups chicken broth
  • 1 can (15 oz) black beans Drained
  • 1 can (15 oz) corn Drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation
  1. Start by chopping your onion and mincing the garlic. Set everything aside to streamline your cooking process.
  2. In your slow cooker, start by placing the chicken breasts at the bottom.
  3. Pour in the chicken broth, followed by the black beans, corn, diced tomatoes, chopped onion, and minced garlic.
  4. Sprinkle in the cumin, chili powder, and a generous pinch of salt and pepper. Stir gently to combine everything.
  5. Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the soup and stir in the lime juice.
  7. Taste and adjust the seasoning if necessary before serving. Ladle the soup into bowls and garnish with fresh cilantro.

Notes

You can use pre-cooked roasted chicken or rotisserie chicken. Refrigerate leftovers for up to 4 days or freeze for up to 3 months.
