- Start by chopping your onion and mincing the garlic. Set everything aside to streamline your cooking process.
- In your slow cooker, start by placing the chicken breasts at the bottom.
- Pour in the chicken broth, followed by the black beans, corn, diced tomatoes, chopped onion, and minced garlic.
- Sprinkle in the cumin, chili powder, and a generous pinch of salt and pepper. Stir gently to combine everything.
- Cover the slow cooker and set it on low for 6-8 hours or high for 3-4 hours.
- Once cooked, remove the chicken and shred it using two forks. Return the shredded chicken to the soup and stir in the lime juice.
- Taste and adjust the seasoning if necessary before serving. Ladle the soup into bowls and garnish with fresh cilantro.
Notes
You can use pre-cooked roasted chicken or rotisserie chicken. Refrigerate leftovers for up to 4 days or freeze for up to 3 months.
