  • 1 pound meatballs (beef, turkey, or chicken)
  • 4 cups beef or chicken broth
  • 1 can (14.5 oz) diced tomatoes with juice
Vegetables
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
Seasoning and Garnish
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • as needed Fresh parsley for garnish

Preparation
  1. Start by chopping the carrots, celery, and onion, and mincing the garlic.
Combining Ingredients
  1. In your slow cooker, add the meatballs, diced tomatoes (with juice), chopped vegetables, minced garlic, Italian seasoning, salt, and pepper.
  2. Pour the broth over everything, ensuring that the ingredients are submerged.
Cooking
  1. Cover and cook on low for about 6-8 hours or on high for 3-4 hours.
  2. The longer it cooks, the more the flavors mingle.
Serving
  1. Once done, taste and adjust the seasoning if necessary.
  2. Serve hot, garnished with fresh parsley.

Notes

For a vegetarian twist, substitute meatballs with lentil or chickpea balls. Add chili flakes for extra heat. Stir occasionally for even cooking.
