For the Soup
  • 1 pound ground beef or Halal Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 28 ounces crushed tomatoes, canned
  • 4 cups beef broth
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Grated Parmesan cheese for serving
  • Fresh basil for garnish

Method
 

Preparation
  1. In a pan over medium heat, brown the ground beef or Halal Italian sausage. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  2. Transfer the cooked meat to your slow cooker.
  3. Stir in the crushed tomatoes, beef broth, Italian seasoning, salt, and pepper, ensuring everything is well combined.
Cooking
  1. Cover and set your slow cooker on low for about 6 hours or high for 3 hours.
  2. About 30 minutes before serving, stir in the broken lasagna noodles.
  3. Just before serving, mix in the ricotta cheese and top with shredded mozzarella. Let it sit for a few minutes until the cheese is melted.
  4. Serve hot, garnished with grated Parmesan and fresh basil on top.

Notes

For a lighter option, try using ground turkey or chicken. Substitute beef broth with vegetable broth for a vegetarian twist. Avoid overcooking the noodles by adding them towards the end of the cooking process, and adjust seasonings to taste.
