Method
 

Preparation
  1. Season the beef chuck roast generously with salt and pepper on all sides.
  2. In a bowl, combine beef broth, Italian seasoning, and minced garlic. Stir well.
  3. Transfer the seasoned roast to a slow cooker and scatter bell peppers and onions on top if using.
  4. Pour the broth mixture over the roast.
Cooking
  1. Cover and cook on low for 8 hours or on high for about 4 hours, until the meat is tender.
  2. Remove the roast from the slow cooker, shred it with forks, and return it to the broth.
