  • 4 pieces boneless, skinless chicken breasts
  • 1 cup cherry tomatoes, halved
  • 1/2 cup kalamata olives, pitted and sliced
  • 1 piece onion, sliced
  • 3 cloves garlic, minced
Seasonings and Liquids
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 piece Juice of 1 lemon
For Serving
  • to taste Feta cheese for serving
  • to taste Fresh parsley for garnish

Method
 

Preparation
  1. Begin by rinsing your chicken breasts under cold water. Pat them dry with paper towels and set aside.
  2. Halve the cherry tomatoes, slice the onion, and mince the garlic.
Assembly
  1. In your slow cooker, place the chicken breasts at the bottom.
  2. Top with halved cherry tomatoes, sliced kalamata olives, sliced onion, and minced garlic.
Seasoning and Cooking
  1. Sprinkle the dried oregano, salt, and black pepper over the top.
  2. Pour in the chicken broth and the juice of one lemon.
  3. Cover the slow cooker and set it to cook on low for 6-8 hours or on high for 3-4 hours.
Serving
  1. Once the chicken is cooked through and tender, serve on a platter.
  2. Sprinkle with feta cheese and garnish with fresh parsley.

Notes

For perfect results, check the chicken's doneness around the 3-hour mark if cooking on high. This dish can also be stored in the refrigerator for 3-4 days or frozen for up to three months.
