Preparation
- Start by cutting the beef into bite-sized pieces and dicing the onion.
- Halve the baby potatoes so they can cook evenly.
Sautéing
- In a large skillet over medium-high heat, melt 2 tablespoons of the garlic butter.
- Once melted, add the beef pieces to the skillet. Season with salt and pepper and sear them on all sides.
Slow Cooking
- Transfer the seared beef into the slow cooker.
- Add the chopped onion and halved baby potatoes on top.
- Pour in 2 cups of beef broth and add the remaining garlic butter. Stir everything gently to combine.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
Serving
- Just before serving, sprinkle freshly chopped parsley over the top for a fresh touch.
Notes
The beef should be well-seared to avoid too much moisture. Avoid lifting the lid during cooking to retain steam. This dish makes great leftovers; store in an airtight container for up to 3 days in the refrigerator or freeze for up to 3 months.
