Preparation
  1. Start by cutting your beef into bite-sized chunks, if not already done.
Cooking
  1. Place the halved baby potatoes at the bottom of the slow cooker.
  2. Add the beef on top of the potatoes.
  3. In a medium saucepan over low heat, melt the unsalted butter.
  4. Add the minced garlic, Italian seasoning, salt, and pepper to the melted butter.
  5. Mix until fragrant, usually about 2-3 minutes.
  6. Carefully pour the garlic butter mixture over the beef and potatoes, ensuring everything is evenly coated.
  7. Cover and cook on low for 6-8 hours or high for 3-4 hours until the beef is tender and the potatoes are fork-tender.
Serving
  1. Garnish with fresh parsley before serving. Enjoy your homemade beef bites as they are, or pair them with a fresh salad!

Notes

You can substitute beef bites for chicken chunks if preferred. Make sure not to overfill your slow cooker. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Thaw overnight in the refrigerator and reheat as needed.
