Preparation
- Start by chopping the onion, garlic, carrots, and celery.
- Place the boneless, skinless chicken breasts in the bottom of the slow cooker.
- Next, toss in the chopped onion, minced garlic, sliced carrots, and sliced celery.
- Sprinkle the dried thyme and parsley over the top. Add salt and pepper to taste.
- Carefully pour in the chicken broth, ensuring everything is submerged.
Cooking
- Set your slow cooker to cook on low for 6-8 hours or high for 3-4 hours.
- Once done, remove the chicken, shred it with two forks, and return it to the soup.
- In the last 30 minutes of cooking, add the egg noodles and spinach (if using). Stir and let them cook through.
Serving
- Finally, ladle this heartwarming soup into bowls, garnish if desired, and enjoy!
Notes
Store leftovers in airtight containers for up to 3-4 days in the fridge, or freeze for later use. Reheat on the stove or microwave, adding extra broth if necessary.
