  • 16 ounces gnocchi Store-bought gnocchi is fine.
  • 2 cups baby spinach For added nutrition.
  • 1 cup heavy cream For creaminess.

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat. Add diced onions and minced garlic. Sauté until the onions are translucent and fragrant—about 3 minutes.
  2. Place the chicken breasts at the bottom of the slow cooker. Season with salt, pepper, and Italian seasoning.
  3. Pour in the chicken broth over the chicken. Add the sautéed onions and garlic into the slow cooker.
Cooking
  1. Cover and cook on low for 6 hours or high for 3 hours, until the chicken is cooked through and tender.
  2. 30 minutes before serving, add the gnocchi and baby spinach. Stir well and cover again, allowing the gnocchi to cook through.
  3. Before serving, mix in the heavy cream for that luscious finish.
  4. Ladle the soup into bowls, and enjoy it warm with your favorite bread or crackers!

Notes

For lighter options, use half-and-half or coconut milk instead of heavy cream. Adjust cooking time based on your slow cooker model. Stir the soup during the last 30 minutes to allow gnocchi to soak up flavors.
