- Begin by chopping your bell pepper and onion, and mincing the garlic.
Cooking
- In your slow cooker, place the chicken pieces at the bottom. Layer the peeled shrimp on top. Follow with the rice, diced bell pepper, onion, and garlic.
- Pour the chicken broth over the entire mixture. Sprinkle Cajun seasoning, salt, and pepper to taste.
- Cover your slow cooker and set it to cook on low for 6 hours or high for 3 hours.
- Once cooked, gently fluff the rice with a fork, mixing in the chicken and shrimp. Top with fresh green onions and serve hot.

Feel free to swap out the chicken or shrimp for your favorite halal options, like fish or tofu, for a different flavor twist. Cooking on low provides the best flavor infusion. It’s easy to overdo the seasoning—start with less and adjust to taste.
