- Begin by placing the boneless, skinless chicken breasts at the bottom of your slow cooker.
- Pour in the kidney beans, black beans, and corn over the chicken.
- Open your can of diced tomatoes (no need to drain) and add them to the ingredients.
- Sprinkle the ranch dressing mix, garlic powder, onion powder, and buffalo sauce over everything.
- Ensure the dish gets ample moisture by adding in the chicken broth.
- Lightly stir all ingredients together. Season with salt and pepper to your liking.
- Cover and cook on low for about 6-8 hours, or on high for 3-4 hours, until the chicken is tender and easily shreds.
- When done, shred the chicken directly in the slow cooker using two forks, stir, and serve hot.
- Top with chopped green onions and shredded cheese for added flavor.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat on the stovetop or microwave before serving.
