  • 2 lbs beef stew meat Cut into bite-sized pieces.
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 1 bell pepper, chopped
  • 1 can (14 oz) coconut milk
  • 2 cups beef broth
  • 2 tablespoons curry powder
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste

Preparation
  1. Start off by chopping your onion, minced garlic, sliced carrots, and chopped bell pepper. Set them aside for easy access.
Cooking
  1. For added flavor, you can sear the beef stew meat for a few minutes in a pan. This step is optional, but it gives your beef an extra depth.
  2. Place the beef, chopped onion, garlic, carrots, bell pepper, coconut milk, beef broth, curry powder, ginger, salt, and pepper in the slow cooker.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Serving
  1. Once your curry is ready, serve it over cooked rice or with warm naan for a complete meal.

Notes

Leftovers can be stored in the refrigerator for 3-4 days in an airtight container. For longer storage, freeze for up to 3 months, thaw overnight, and reheat on the stove over medium heat.
