Preparation
- Start off by chopping your onion, minced garlic, sliced carrots, and chopped bell pepper. Set them aside for easy access.
Cooking
- For added flavor, you can sear the beef stew meat for a few minutes in a pan. This step is optional, but it gives your beef an extra depth.
- Place the beef, chopped onion, garlic, carrots, bell pepper, coconut milk, beef broth, curry powder, ginger, salt, and pepper in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Notes
Leftovers can be stored in the refrigerator for 3-4 days in an airtight container. For longer storage, freeze for up to 3 months, thaw overnight, and reheat on the stove over medium heat.
