Method
 

Preparation
  1. Gather all your ingredients and ensure they are fresh. Measure the walnuts, maple syrup, vanilla extract, salt, and cinnamon (if using).
  2. In a mixing bowl, combine the walnuts, maple syrup, vanilla extract, salt, and cinnamon. Stir until all walnuts are evenly coated with the syrup mixture.
  3. Lightly coat the bottom of your slow cooker with cooking spray or line it with parchment paper for easy cleanup.
Cooking
  1. Pour the walnut mixture into the slow cooker. Cover and cook on low for about 2-3 hours. Stir the mixture every hour to ensure an even coating.
  2. After a couple of hours, check for doneness. The walnuts should be golden brown and fragrant. If needed, you can let them cook for a bit longer, but be sure to keep an eye on them.
Serving
  1. Once ready, remove the walnuts from the slow cooker and let them cool for a few minutes. They will become crispier as they cool down. Enjoy them warm, or store them for later!

Notes

These walnuts are best enjoyed fresh but can be stored in an airtight container at room temperature for up to a week. For longer storage, refrigerate them for up to two weeks or freeze for up to three months.
