  • 32 ounces frozen tater tots Thaw slightly for more even cooking.
  • 1 cup shredded cheddar cheese (or any preferred cheese for topping) Use dairy-free alternative if needed.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened. Add the ground beef and cook until browned. Drain any excess liquid.
  3. Pour in the Sloppy Joe sauce, stirring to combine. Let it simmer for about 5 minutes. Season with salt and pepper to taste.
  4. In a greased 9x13 inch baking dish, spread the Sloppy Joe mixture evenly. Layer the frozen tater tots on top, covering the entire surface.
  5. Sprinkle the shredded cheese evenly over the tater tots.
  6. Place the casserole in the preheated oven and bake for 30-35 minutes, until the tater tots are golden brown and crispy and the cheese is bubbling.

For crispiest tater tots, ensure they are slightly thawed but not mushy before baking. You can bake the tater tots separately for crunchier topping.
