- Preheat your oven to 350°F (175°C).
- In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, cooking until softened. Add the ground beef and cook until browned. Drain any excess liquid.
- Pour in the Sloppy Joe sauce, stirring to combine. Let it simmer for about 5 minutes. Season with salt and pepper to taste.
- In a greased 9x13 inch baking dish, spread the Sloppy Joe mixture evenly. Layer the frozen tater tots on top, covering the entire surface.
- Sprinkle the shredded cheese evenly over the tater tots.
- Place the casserole in the preheated oven and bake for 30-35 minutes, until the tater tots are golden brown and crispy and the cheese is bubbling.
- Let it cool for a few minutes before serving. Enjoy with a fresh side salad or your favorite dipping sauces!

For crispiest tater tots, ensure they are slightly thawed but not mushy before baking. You can bake the tater tots separately for crunchier topping. Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for up to 3 months. Reheat in the microwave or preheated oven at 350°F (175°C) until warmed through.
