Sloppy Joe Grilled Burritos

Ingredients
  

For the Filling
  • 1 lb ground beef or turkey
  • 1 small onion, chopped
  • 1/2 cup ketchup
  • 1/4 cup mustard
  • 1 tbsp Worcestershire sauce
  • Salt & pepper to taste
For the Burritos
  • 6 flour tortillas
  • 1 cup shredded cheese (cheddar or Monterey Jack)

Method
 

Preparation
  1. In a large skillet, over medium heat, add the ground beef or turkey. Sauté until browned, breaking it up into small pieces as it cooks—about 5-7 minutes.
  2. Once the meat is browned, add the chopped onion. Continue cooking until the onion is soft—around 3 minutes.
  3. Lower the heat and stir in ketchup, mustard, Worcestershire sauce, salt, and pepper. Let the mixture simmer for about 5 minutes, stirring occasionally.
Assembly
  1. Take a flour tortilla and add a generous scoop of the Sloppy Joe filling onto the center. Sprinkle with shredded cheese.
  2. Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom. Repeat this with all tortillas.
Grilling
  1. Heat a non-stick grill pan or skillet over medium heat. Add the burritos seam side down, grilling for about 3-5 minutes on each side, until golden and crispy.
Serving
  1. Cut in halves or quarters, serve with your favorite toppings, and enjoy!

Notes

For a vegetarian option, use ils or black beans instead of meat. Storing leftovers: Refrigerate for up to three days or freeze for up to three months.
