Preparation
- Preheat your oven to 350°F (175°C).
- In a skillet, melt the butter over medium heat. Add the chopped onions and cook until soft and translucent, about 4-5 minutes.
- In a large mixing bowl, combine the Simply Potatoes, sautéed onions, heavy cream, cheddar cheese, half of the Parmesan, salt, and pepper. Stir until well mixed.
- Pour the potato mixture into a greased baking dish, spreading it evenly.
- Sprinkle the remaining Parmesan cheese on top.
- Bake in the preheated oven for approximately 30-35 minutes, or until the top is bubbly and golden brown.
- Let cool for a few minutes, garnish with chopped chives if desired, and serve warm.
Notes
Store leftovers in the refrigerator for up to 3 days in an airtight container. Can freeze for up to 2 months. For reheating, thaw overnight and microwave or bake until heated through. Cover with foil if baking from frozen to retain moisture.
