Ingredients
  

Pudding Base
  • 1/4 cup chia seeds
  • 2 cups coconut milk (or any milk of choice) Can substitute with almond milk, soy milk, etc.
  • 1/2 cup key lime juice
  • 1/4 cup honey or maple syrup Adjust sweetness to preference.
  • 1 teaspoon vanilla extract
  • 1 unit zest of 1 lime For garnish.
  • a pinch salt

Method
 

Preparation
  1. In a mixing bowl, combine the chia seeds, coconut milk, key lime juice, honey or maple syrup, vanilla extract, and a pinch of salt. Stir well to ensure all ingredients are evenly distributed.
  2. Use a whisk to mix everything together for about 2-3 minutes until the mixture thickens slightly, preventing clumping of chia seeds.
  3. Cover the bowl or transfer to individual serving jars. Refrigerate for at least 4 hours or overnight to let the chia seeds absorb the liquid.
  4. Before serving, give it a good stir, and add lime zest on top. Optional: add fresh fruit or nuts for extra crunch.

Notes

This pudding can be stored in an airtight container in the fridge for up to five days. For longer storage, it can be frozen for up to a month.
