Method
Preparing the Dough
- In a large mixing bowl, combine the flour, sugar, instant yeast, and salt. Stir lightly until well mixed.
- Gradually add warm water and olive oil. Mix with a spatula until the ingredients begin to combine into a shaggy dough.
- Turn the dough onto a lightly floured surface. Dust your hands with flour and knead the dough for about 5-7 minutes until it’s smooth and elastic.
First Rise
- Place the kneaded dough into a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 45 minutes or until it has doubled in size.
Shaping and Filling
- Preheat your oven to 375°F (190°C).
- Grease a 9x13 inch baking dish.
- Once the dough has risen, punch it down to release excess air. Transfer it to the prepared baking dish, stretching it gently to fit the pan.
- Using your fingers or the handle of a wooden spoon, create deep wells in the dough. Spoon in the jam, making sure to distribute it evenly across the dough.
Second Rise and Baking
- Cover the dough again with a towel and let it rest for another 15-20 minutes.
- Place the baking dish in the preheated oven and bake for 20-25 minutes or until golden brown.
Finishing Touch
- Let the focaccia cool slightly before dusting it with powdered sugar or adding any extra toppings. Slice and enjoy warm!
