  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon instant yeast
  • 1/2 teaspoon salt
  • 3/4 cup warm water about 110°F
  • 1/4 cup olive oil
  • 1/2 cup jam your favorite flavor

Method
 

Preparing the Dough
  1. In a large mixing bowl, combine the flour, sugar, instant yeast, and salt. Stir lightly until well mixed.
  2. Gradually add warm water and olive oil. Mix with a spatula until the ingredients begin to combine into a shaggy dough.
  3. Turn the dough onto a lightly floured surface. Dust your hands with flour and knead the dough for about 5-7 minutes until it’s smooth and elastic.
First Rise
  1. Place the kneaded dough into a greased bowl, cover it with a clean towel, and let it rise in a warm place for about 45 minutes or until it has doubled in size.
Shaping and Filling
  1. Preheat your oven to 375°F (190°C).
  2. Grease a 9x13 inch baking dish.
  3. Once the dough has risen, punch it down to release excess air. Transfer it to the prepared baking dish, stretching it gently to fit the pan.
  4. Using your fingers or the handle of a wooden spoon, create deep wells in the dough. Spoon in the jam, making sure to distribute it evenly across the dough.
Second Rise and Baking
  1. Cover the dough again with a towel and let it rest for another 15-20 minutes.
  2. Place the baking dish in the preheated oven and bake for 20-25 minutes or until golden brown.
Finishing Touch
  1. Let the focaccia cool slightly before dusting it with powdered sugar or adding any extra toppings. Slice and enjoy warm!

Notes

Flour substitutes may be used; a 1:1 gluten-free flour blend is recommended for gluten-free options. Allowing the dough to rise fully is crucial for achieving that airy texture.
