  • 1 cup fresh or canned cherries, pitted
  • 1 cup all-purpose flour Can be substituted with almond flour for a nutty flavor.
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, melted
  • 2 large eggs Should be at room temperature.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk Should be at room temperature.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or cooking spray.
  3. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, and salt. Stir gently to combine.
  4. In another bowl, whisk together the melted butter, eggs, vanilla extract, and milk until well blended.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing.
  6. Gently fold the pitted cherries into the batter.
Baking
  1. Pour the batter into the prepared baking pan and smooth it out.
  2. Bake for about 30 minutes, or until a toothpick inserted comes out clean.
  3. Remove from the oven and let cool in the pan for a few minutes before transferring to a cooling rack.
  4. Allow to cool completely before slicing.

Notes

Store wrapped tightly in plastic or an airtight container. Keeps at room temperature for 3 days, refrigerated for a week, or frozen for up to 3 months.
