Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch round cake pan with butter or cooking spray.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, and salt. Stir gently to combine.
- In another bowl, whisk together the melted butter, eggs, vanilla extract, and milk until well blended.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing.
- Gently fold the pitted cherries into the batter.
Baking
- Pour the batter into the prepared baking pan and smooth it out.
- Bake for about 30 minutes, or until a toothpick inserted comes out clean.
- Remove from the oven and let cool in the pan for a few minutes before transferring to a cooling rack.
- Allow to cool completely before slicing.
Notes
Store wrapped tightly in plastic or an airtight container. Keeps at room temperature for 3 days, refrigerated for a week, or frozen for up to 3 months.
