Preparation
- Start by chopping the onion, carrots, and celery. Mince the garlic, and cut the chicken into bite-sized pieces.
Cooking
- In a large pot, heat a drizzle of olive oil over medium heat. Add the chopped onion, carrots, and celery. Sauté until they start to soften, about 5-7 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the cut chicken to the pot. Cook until the chicken is golden on all sides, about 10 minutes.
- Pour in the can of diced tomatoes (with its juices) and add the chicken broth. Bring the mixture to a gentle boil.
- Add oregano, basil, and season with salt and pepper. Reduce the heat, cover the pot, and simmer for about 30 minutes.
- After 30 minutes, taste the soup. Adjust the seasoning as needed.
- Serve hot, garnished with fresh parsley.
Notes
Store in an airtight container in the refrigerator for up to 3-4 days, or freeze for longer storage. Reheat gently on the stovetop, adding a splash of water if needed to maintain consistency.
